I know some are not used to staying at home for three months but those who enjoyed this quarantine made a lot of bonding moments with their loved ones through baking or cooking.      This simple yet tasty recipe is sure to be always on top of our list when deciding what will be on the table for the day. Aside from its simple ingredients, this Filipino dish is at the same time very easy to cook and healthy. This is perfect with steamed rice and dipping sauce of 'patis na may kalamansi at sili' (fish sauce with bird's eye chili).

How to Cook Kinamatisang Manok for Your Family

Ingredients:

1 whole chicken (chopped)
4 medium-sized tomatoes (you can add more if you like)
1 pack Spinach
1 medium-sized bell pepper (sliced)
4 cloves minced garlic
1 medium-sized onion (diced)
1 tablespoon fish sauce
1 cup chicken broth (or 1 chicken cube diluted in 1 cup water)
2 – 3 tablespoons of corn oil
1 teaspoon ground black pepper

How to cook:

1. Prepare chicken meat and cut it into small parts.
2. Heat 2 - 3 tbsp. of corn oil and sauté the garlic and onions.
3. Add the sliced tomatoes.
4. Cover for 3 minutes and let the moisture of the tomatoes settle.
5. At this point, you can now add the chopped chicken.
6. Sauté until medium brown.
7. Add the fish sauce and continue to sauté.
8. Pour 1 cup of water.
9. Add a cup of Chicken broth or 1 chicken cube diluted in 1 cup water.
10. Cover and simmer on low heat for 30 minutes.
11. Drop the sliced bell pepper and ground black pepper then cover and cook for 3 minutes.
12. Add the spinach and cook for 3 more minutes.
13. Serve.
