Months ago, I was craving for ramen after looking for furniture for our newly renovated house. I still can't believe that it's only my first time to eat authentic ramen since the trend hit several years ago. Yes, it was already years ago when numerous ramen restaurants sprouted around Metro Manila faster than you could slurp up a bowl of miso soup.

Fast forward today, ramen restaurants are too many to count. So what to expect when you see a ramen house? Check the three criteria-quality, authenticity, and (for the bolder chefs), an innovation so that you'll have a happy tummy after finishing a bowl. We were in Trinoma that day and we found a place where ramen is served the way it should be- Hanamaruken Ramen. Kow more about this ramen house in my short feature below.

  • Hanamaruken Ramen was founded by Takaku Arakawa in 1382.
  • It is a subsidiary of the Arakawa Pork Company, a reputable supplier of meat in Osaka, Japan.
  • He discovered “Tonkotsu” which is stewed pork cartilage—a cut that was not only delicious and flavorful, but one that could easily broken by chopsticks.
  • This is what set his ramen apart from the numerous ramen restaurants in Osaka, and is what birthed what many like to call his masterpiece ramen: The Signature Happiness Ramen.
  • Over 40 restaurants later, Hanamaruken has found its new home in Manila, thanks to ramen enthusiast, technopreneur, and restaurateur Charles Paw. He frequented the restaurant so often during his travels that he decided to bring it here as a franchise.

3. Salary Man Ramen- this is the ramen that I ordered because I just wanted a flavorful ramen with the right amount noodles, toppings, and soup. I thought this humongous bowl of ramen is good for 2 persons but I'm wrong! For some, this serving is good for one person only. The sliced pork shoulder is tender and flavorful.

Hanamaruken Rice Bowl-  rice and a topping of choice in a bowl. My hubby was craving for rice topping and good thing that Hanamaruken has many choices. He ordered the Drunk Man Rice Bowl which includes kukuni with two fried eggs on rice. There's a little kick of spice on the meat which the hubby really liked.

Kenzo, on the other hand, ordered the Happiness Rice Bowl, which includes the famous pork rib over steamed rice. They said that this one is a crowd's favorite. The meat has a sweet sauce and melts in your mouth texture.

I was happy that the three of us went home with smiles because we had a great experience at Hanamaruken. I'll be back to try other ramen variants and rice toppings.
